Title: Scalloped Potatoes with Pimentos

Yield: 1 Servings

4cDiced potatoes
2 Pimentos, chopped
  Salt and pepper
1 Green pepper, chopped
1 1/2cMedium white sauce
1/2cGrated cheese

Cook potatoes 5 minutes. Drain. Add green pepper and pimentos. Season to taste. Pour into well-oiled baking dish. Cover with white sauce to which cheese has been added. Bake in moderate oven (350 F) about 50 minutes. 6 servings.
